WHICH FRENCH TOAST RECIPES SHOULD I MAKE?

MAPLE BACON FRENCH TOAST ROLL-UPS

You had us at “maple.”

  • 8 slices bacon, cut into 1″ pieces
  • 2 shallots, minced
  • 1/3 c. maple syrup
  • 2 tbsp. apple cider vinegar
  • 1/4 c. cinnamon sugar
  • 2 large eggs
  • 1/2 c. whole milk
  • 1/4 tsp. pure vanilla extract
  • 8 slices white bread, crusts removed
  • 3 tbsp. butter
  • Maple syrup, for serving
INSTRUCTIONS
  • Make bacon filling: In a medium saucepan over medium heat, cook bacon, stirring occasionally, until crispy, about 8 minutes. Transfer bacon to a paper towel–lined plate, reserving about a tablespoon of bacon fat in the pan.
  • Reduce heat to medium-low. Add shallots to pan and cook, stirring often, until golden, about 3 minutes.
  • Stir in maple syrup, vinegar, and cooked bacon. Bring mixture to a simmer then reduce heat to low. Cook until the liquid has reduced and thickened and the shallots are jammy, about 7 minutes.
  • Make roll-ups: Place cinnamon sugar on a plate and set aside. In a shallow bowl, whisk together eggs, milk, and vanilla and set aside.
  • Roll out each slice of bread until flat and thin. Spread a thin layer of filling onto each slice, then roll up tightly. Briefly dunk each roll-up into egg mixture.
  • In a large nonstick skillet, melt butter over medium heat. Add roll-ups to skillet seam side down. Cook, in batches, until golden all over, about 2 minutes per side. Dip cooked roll-ups in cinnamon sugar and transfer to plate to cool. Repeat with remaining butter and roll-ups.
  • Serve with maple syrup for dunking.

French Toast Like Never Before

  • 5 eggs
  • 1 c. milk
  • 1/2 c. heavy cream
  • 1 tsp. vanilla
  • 1/4 tsp. ground nutmeg
  • 1 tsp. cinnamon
  • Pinch kosher salt
  • 1 stick melted butter
  • 3/4 c. brown sugar
  • 1/4 c. maple syrup
  • 1 loaf challah bread, sliced 1” thick
  • Confectioners’ sugar, for serving (optional)
INSTRUCTIONS
  • Preheat oven to 375 degrees F.
  • In a small bowl, whisk together melted butter, brown sugar and maple syrup. Pour mixture into a large tall baking dish and spread into an even layer using a spatula. Arrange bread on top in a single layer.
  • In a large bowl, whisk together eggs, milk, cream, vanilla, cinnamon, nutmeg and salt. Pour mixture over bread. If you have time, cover and let soak in refrigerate for 1 hour or up to overnight. Otherwise, bake for about 25 minutes, or until the the butter-sugar mixture is bubbling in the bottom of the pan.
  • Serve immediately, sugar side up. Sift powdered sugar on top if desired.

BANANA BREAD FRENCH TOAST

The only way to make banana bread better.

  • 4 large eggs
  • 1/4 c. whole milk
  • 1 tsp. pure vanilla extract
  • 1 tsp. ground cinnamon
  • pinch of kosher salt
  • 2 tbsp. butter
  • Leftover banana bread (this recipe uses 3/4 loaf)
  • Sliced banana, for serving
  • Chocolate chips, for serving
  • Maple syrup, for serving
INSTRUCTIONS
  • In a medium bowl, whisk together eggs, milk, vanilla, cinnamon, and salt.
  • In a large skillet over medium heat, melt butter. Working in batches, coat banana bread with egg mixture for 30 seconds, then place in heated skillet.
  • Cook until golden, 2 to 3 minutes per side. Top with sliced bananas and chocolate chips, and drizzle with maple syrup.

FRENCH TOAST MUFFINS

French Toast Like Never Before

  • Cooking spray, for pan
  • 12 slices bread, preferably stale
  • 6 eggs
  • 1 1/2 c. milk
  • 1 tbsp. granulated sugar
  • 2 tsp. pure vanilla extract
  • 1 tsp. ground cinnamon
  • 1/2 tsp. kosher salt
  • Powdered sugar, for serving
  • Maple syrup, for serving
INSTRUCTIONS
  • Preheat oven to 350° and grease a 12-cup muffin tin with cooking spray. Cut bread into ½” cubes and set aside.
  • In a large bowl, beat eggs, milk, sugar, vanilla, cinnamon, and salt until mixture is smooth. Add bread pieces and toss until the bread has absorbed most of the liquid.
  • Divide mixture between muffin tin cups, pressing down lightly on each to make muffin more compact.
  • Bake until bread is toasted and muffins are cooked throughout, about 25 minutes. Let cool in muffin tin for 5 minutes.
  • Dust with powdered sugar and serve warm with maple syrup.
